Last week my Zeus turned 1 years old, Yay! I knew I wanted to give him a delicious treat and set out to look for a huge cookie or some big treat. I visited pet stores and local pet shop but found nothing worth a Birthday Cake! Then one of my viewers on my youtube suggested I make him a Carrot Cake. I thought, that is a great idea but I had one situation...I don't give Zeus any grains.
So what did I know that he loves and I can give him? Well, I knew he loved ice cream, apples, carrots, and Peanut Butter, so I took it to the internet and found a few recipes. I found a great recipe that seemed easy and with only Carrot and Peanut Butter! Easy. Let me tell you it was a HUGE hit with both Zeus and Brutus! Just when I started preparing the filling with the carrot pulp and the flax, oh my, he was near the counter top waiting for something to fall, haha! And, then while it baked and I prepped the pb & coconut oil, they were very close to me. The recipe asks for carrot pulp so luckily I have a juicer that I can easily make myself some carrot (beet juice) for later. That's what I did, I juiced the carrots first and separated the pulp. Then followed the rest of the recipe. I did want to make cute topping and used some cut out hearts from an apple, see pictures! You will also see that I made two cakes, regular round shape for Zeus and a bone shaped cake for Brutus. It was easy to mold any shape you would like, just be careful when you transfer from pan/baking sheet to serving plate. I also let the cakes cool down before decorating and before serving.
